Skilled Black-garlic craftsmen carefully steam and bake garlics from Gifu prefecture for two weeks, and ferment them with low temperature for two more weeks. They are then dried for another one week. We make our garlic listen to Mozart, hoping that it is going to become tastier. we, "Haruko Sugiyama Medical Meal Research Laboratory" put a lot of effort for this black garlic. The smell of garlic is almost non-existent.
